Three centuries might simply imply dusty cellars. Not so with Maison Champy who in 1866 helped Louis Pasteur develop his, 'Etudes sur le Vin: Diseases, Causes, New Process to Keep and Age Wine'. Then in 1890 (celebrating 170 years young) Maison Champy built a new winery in Beaune using Eiffel's (he of the Tower) architecture.
