This recipe was given to my grandmother, Peaches Smith, by a dear friend of hers. The more she made it, the more she "tweeked" it...making it better and better all the time. It was, by far, my most favorite dish at Thanksgiving and will continue to be my favorite until I die! This recipe is so super easy...and is so rewarding!!
Ingredients:
- 3 Cups mashed sweet potatoes
- 2 eggs, beaten
- 1 ¼ Cup Sugar
- ¼ Cup Flour
- 1 Large can evaporated milk
- 1 ½ stick melted margarine
Mix all ingredients together and put into a greased 9x13” pan.
Topping:
- 1 Cup crushed cornflakes or 1 Cup Rice Krispies
- ½ Cup brown sugar
- ½ Cup chopped pecans
- ½ Cup coconut
Mix together and spread over top of potatoes. Bake at 350º for 40 minutes or until golden brown on top. EAT LIKE CRAZY!!!
