In this chatty episode, Emie shares one of her families favorite summer go-to recipes and a song that she used to love that has made it back to the top of her playlist and on repeat! Pepper Salad 1 green bell pepper 1 Red bell pepper 1 orange bell pepper 1 can of whole kernel corn (drained) 1 can of black beans (rinsed & drained) 1 bunch of fresh cilantro 1 red onion ¼ cup of lemon juice Salt and pepper to taste Chop or use food processor to get all the peppers and onion pieces about the size of corn and beans. Super easy to scale for larger batches.
