Pam Kelly - The Crazy World of a Head Chef
On today’s podcast I chatted with well known and much loved , who has been a Head Chef in Cork city for over 20 years. Her early years were spent in a one bed flat in The LIberties in Dublin and then the family moved to the total opposite, a huge house in the country in Ballinasloe. The hospitality industry was in the family blood, so her career choice was no surprise even though at a very early stage Pam had a notion that she might like to become a nun until she discovered other interests including a love for heavy metal! We chatted about her early life, alcoholism in the family, the crazy but wonderful world of food, her favourite places to eat and her next career steps. She has worked as Head Chef in Cork in popular restaurants including Harvey’s Bistro, Nash 19, Perry Street, Market Lane and The Farm Gate, and each of them comes with their own stories. Paul Kearns on the Dangers of Extreme Anti-Israeli Sentiment and Media Censorship
On today’s podcast I chat once again with urban planner, author and journalist who has been living in Tel Aviv with his young family for the last 8 years. Paul has been bringing us the truth from within Israel throughout the Gaza war, including the story of censorship by the media there and the presentation of the genocide in a very sanitised way to the people of Israel. In bravely doing so, Paul has in many cases alienated himself from friends and family but his honesty has been much appreciated and his writing has been very welcome by Irish media. He is now increasingly concerned by some political rhetoric and what he is hearing from the Jewish community in Ireland. He believes that the horrors we have witnessed in Gaza has resulted in visceral antisemitism, which could be a real threat to this community and his own family should he ever decide to visit or even return to Ireland to live. When he wrote about this topic, the media outlets who were happy to take his earlier articles did not want to know. We spoke about this version of censorship, antisemitism, holocaust deniers, conspiracy theories and how a country can start to rebuild its reputation, which is in tatters. Lorcan is from a small town in Roscommon, he is a qualified primary school teacher but as he says himself he chose this profession initially as it was a “safe” choice. He chatted about living as a gay man, deciding when to come out, his huge interest in the Middle East and geo politics and his brief spell working in that industry, which he would love to get back to. Nerella Chauvin - Happiness is Waking Up Each Day
On today’s podcast I chatted with Occupational Therapist, who lives just outside Budapest in Hungary with her family. This busy career professional who was running her own successful practice turned 50 last summer and suddenly her life was turned upside down. She lay on the bed with a cup of coffee and started checking some emails - when she woke after what felt like a nap, she had a concerned audience at the foot of her bed. She had a seizure and had just come around. Tests diagnosed that not only did she have but she also had a condition called , which causes memory loss. This occupational therapist who had specialised in helping people with epilepsy was now suddenly the patient who could no longer work or drive and the simplest of life tasks carried many practical risks. While the doctors are still experimenting with drugs to stabilise her condition Nerella has had to learn how to live again and she does this through a new lens; “Happiness is Waking up” she says. Ellie - Healing through Animals and Ghostbusting!
On today’s podcast I have a very different conversation with Ellie the founder of in West Cork. The very lovely Ellie provides a very unusual range of healing services both in person and remotely, but not via the Zoom or Microsoft Teams variety. I met with her at her beautiful home in idyllic West Cork at the foot of Mount Gabriel which she shares with her daughter and some horses that she uses as part of her work. Ellie chats about her early life and how this brought about an extremely strong connection to animals, which has continued to this day. As well as developing the ability to communicate with animals she also has the ability to see and communicate with the spirits that surround us. Following her curiosity and exploring these unusual gifts led her away from an early career as a chef to founding her own business that helps people and animals who may be in some distress. Paul who is originally from Ireland, is a journalist, a political commentator and the founder and CEO of , a national suicide prevention service. On the announcement of the very serious joke that is the 28 point “Peace Plan” that was cobbled together by Trump’s administration and Putin, I just had to get Paul on the podcast to discuss it and the likely response from Ukraine. Paul, just days after Russian explosives had destroyed apartments just two floors above his own, he tells me in no uncertain terms what the response will be, and assures me that Ukraine is not on its knees and won’t be capitulating to Russia at any point in the future. We chatted about life in Ukraine, the conscription of civilians to the army, the thousands of abducted children, the resilience of the people and how he believes this war will end. It is crystal clear that Trump is on the side of Russia, and what may not be clear is that while this is a huge issue for Ukraine today it could easily be a similar issue for Europe tomorrow. Fr. David Gierlach - Jesus Christ! He Still Matters
On today’s podcast I had the pleasure of the company of Episcopal priest, speaking from his parish in Honolulu, in Hawaii. Fr. David was encouraged to speak his mind on social media a couple of years’ ago when many people were outraged that Transgender Appreciation Day coincidentally fell on the same day as Easter Sunday. His post blew up! Fr. David realised that he had a powerful platform and his gift for communication could take his voice beyond the congregation in his own parish. Two years later this skilled and passionate priest has amassed a following of over 600,000 people between , , and and he uses this to talk straight regularly about basic human values, and in particular the dangerous MAGA cult of morally absent Donald Trump and the damage he is doing. Fr. David started off life in a Catholic seminary, but he left because it wasn't for him. He worked for an alcohol and drug residential centre, he studied law and had a successful two decade career as a lawyer and then in 2009 he became an Episcopal priest. He has recently written a book, ‘’, to remind people about real faith, and not the version that seems to be brainwashing so many at the moment. We need many more like Fr. David. Paul Kearns in Tel Aviv - Peace At Last
On today’s podcast I chat once again with , urban planner, author and journalist who has been living in Tel Aviv with his young family for the last 8 years. Paul brings us his insights from inside Israel since the Trump brokered cease fire - were there celebrations, who is credited with the ceasefire, what is the general mood like, what is the current standing of Netanyahu and what will happen with his corruption trial? He spoke about the trauma of this war for those in Israel, for those in Gaza and the West Bank, and how he tries his very best to explain the war to his very curious 9 year old girl. This was a difficult conversation, and in all honesty it is impossible to see a peaceful path forward, but yet, life goes on for everyone who will have to do their best to recover from the psychological trauma of this utterly pointless war. This world of ours has to do a better job in making sure this does not happen again. Just a day after our conversation Gaza was attacked again and over 100 people were murdered. On today’s podcast I chatted with the author of the book ‘Every Day I’m Brave’, . Renee talks about her life and career and in particular about the struggles of living with otherwise known as OCD. For some reason she was always fearful in her life, and when this mum of three was unravelling with malnutrition because of the irrational fear of what might be in her food, she realised that she had to seek much needed help. Eventually she was diagnosed of having OCD, and it was only with a deep understanding of this condition did she learn how to recognise and control it and begin to change her life for the better. This avid writer put pen to paper and wrote the book ‘’ to help others who suffer from similar conditions or who are gripped by fear, preventing them from living the full lives they deserve. Gifty Enright, author of 'Octopus on a Treadmill'
On today’s podcast I had the immense pleasure of chatting with the author of the book, ‘Octopus on a Treadmill’, . As a young woman growing up in Ghana she dreamt of having lots of shoes, big cupboards, and the trappings of success, so she moved to London to fulfill her dream. She quickly discovered that she missed that strong sense of community that she enjoyed in Ghana, but she dug deep and carved out a very successful career and life for herself in London. After a number of years this successful, hard working career mum hit a “Burnout” wall that she knew could not be solved with the medication that was being prescribed to her. This avid reader who was determined to get better, did some deep research to find a sustainable solution to her life situation. She applied what she learnt and after just three months she was on the road to recovery and hasn’t looked back since. On today’s podcast I had the privilege of speaking with Irish actor , the co-lead of the movie ‘Christy’, which has been winning awards in Ireland and abroad and rave reviews from movie critics everywhere. Diarmuid plays the character Shane in the movie brilliantly, as he wrestles with the job of trying to steer his brother Christy on the right path and at the same time, not to derail his own life. Diarmuid talks in detail about the huge preparation that goes into getting a part like this right, the process around the whole movie and the special bond that has grown between the novice actors and the more experienced actors like himself and Emma Willis, who played his wife Stacey in the movie. He has been acting since he was nine years of age, a career shaped in some ways by a crush on Mary Kate Olsen and personal circumstances, and even now he still finds this crazy profession challenging. While Garry didn’t have a starring role in the movie, you could say he was the biggest star of the movie, because his tireless work as the Founder and Creative Director of the for years and years, can be seen in the performances of some of the main actors as well as the spirit that runs through the whole movie. Danny Power who plays the main character in the movie, Christy, came from the Kabin as well as Jamie Forde, Darren Stewart, Cara Cullen and many of the supporting cast. Much of the music you hear in the movie and is available in the soundtrack came from the Kabin Studio. Christy - A love letter to Cork
After such a long wait we were finally in our seats to watch the premiere of my son’s first feature film, at the prestigious Berlinaile International Film Festival. The speeches were made to open the festival and finally the lights went down and the film began. I wasn’t fully sure what to expect of the movie, and within minutes I found myself emotionally gripped by the story and throughout I laughed and I cried, I cheered on the main characters and hoped that things would work out for them, and at the very end, and I really don’t want to give anything away of the story, I wept and had to take a few moments to dry my eyes and gather myself. The movie was brilliant and moving, all of the talented actors and everyone involved waved the Irish and Knocknaheeney, Cork flag proudly and yes, my son did good, beyond good, brilliant. After the movie had finished and I dried my eyes, I chatted with who did the music score, to see how he enjoyed it, and how he went about creating such a beautiful sound backdrop throughout the film to match the story. I then managed to catch , the man of the moment for a couple of words before chatting with some of the very talented cast; , Sophia McNamara, and , a mix of established and brand new actors about their experience of working in the movie and some other projects they are involved in. At the after party I finally caught up with the extremely humble and down to earth, who played the main character Christy in the movie. This superstar in the making explained his journey from rapping to acting, and how easy that transition was for him and once again it shows the huge role that initiatives like the Kabin Studio can play in young people’s lives. Life in Tel Aviv since October 7th 2023 with Paul Kearns
On today's podcast I chatted with , journalist and urban planner, from his home in Tel Aviv in Israel, just 60 kms from Gaza. Paul is living there with his two young daughters and his partner and he has been there since 2018. He shares in detail the perspective of life there, how it has changed considerably since October 7th 2023, how it is for him and his family, and how it is for his neighbours, friends and Israelis in general. He talks about the censorship by the media when reporting about the atrocities in Gaza, the awkward relationship Israel has with Ireland, and why he has taken it upon himself to write about the conflict and pull back the curtains on the real stories. As an expert on urban planning and urban beauty I ask him how he can possibly continue to live there and how this conflict can be resolved.
