Dr. Frederick Leroy is a professor and food scientist with a PhD in Applied Biological Sciences whose work focuses on animal-source foods, food processing, fermentation, human nutrition, and food systems. His training began in food science and nutrition, including research into food and nutrient security in Africa, before he completed doctoral work in food processing and engineering.
His early research into meat fermentation examined the microbiology, safety, and quality of fermented foods such as salami. Today, his work takes a broader look at the role of animal-source foods in human nutrition, health, sustainability, food culture, and society.
